Robyn in Millenium Park!!

As much as I want to deny it, Summer is coming to an end! Time to take advantage of these hot days we've had recently before this gorgeous weather leaves us. 

When my good friend approached me last week with Robyn tickets, I was absolutely ecstatic to go and jumped at this amazing invite! We packed a large picnic with all the fixings and sat on the lawn, enjoyed the sun and had a blast taking photos and people watching. The crowd and energy was wonderful and everyone danced the night away together. 

 Any Robyn fans out there? I hope everyone is having a fantastic Monday!

Scored this lovely lace vintage Dior sleep top from the local vintage shop for only $20. Isn't she a beauty? This lace detail and the overall fit of this is absolutely perfect.  I will definitely be rocking this silky little number during the daytime, so keep your eyes peeled! I've been running around like a chicken with my head cut off, trying to wrap up loose ends before school and my Scotland trip! Fashion is my happens to be my BIGGEST distraction during my procrastination hours. 

This Narciso Rodriguez Pre-fall 2014 is oh so dreamy though, isn't it? I'm in love with those crisp, clean lines, those lush, textured fabrics and that natural hair and makeup. That combination sits so well with me. I hope you enjoy it too!

Monotone




Happy Monday! This weekend I took some time off everything to relax and beat this exhausting cough I've had for a few weeks now. It was one of those things that just won't go away no matter how health conscious you try to be. Being stressed out about school, my trip, and other things definitely aren't helping my case. Time to relax a bit more in general so I don't get sick before my trip to Scotland. Did I mention that I'm leaving in TWO WEEKS? Eek! I just had my first nightmare about packing last night (yes I'm serious) and lost some sleep over preparing for this trip.

Vanilla chia seed pudding



I'm wayy behind on the chia seed train and I don't know why it took so long to hop on!
I found this interesting recipe for vanilla chia seed pudding on Domesticate Me (link here) before grocery shopping, and thought I'd give it a go! Seemed simple and harmless enough and since I'm STILL sick, I will anxiously try any new super food to get well ASAP.

You will need:

  • 1/4cup + 3 tablespoons chia seeds
  • 2 cups vanilla almond milk (original recipes calls for unsweetened, but I used sweetened)
  • 1 1/4 teaspoons vanilla extract
  • 2 tablespoons quality maple syrup (I omitted this since my almond milk was already sweet!)
  • 1 pinch of kosher salt

Directions

  1. Place everything into a bowl and whisk to combine.
  2. Seal tightly with cling wrap and refrigerate for at least 4 hours and stir occasionally to break up any clumps.
  3. Serve into small dishes and top with granola or fresh fruit

That's it! It turned out quite nice and was actually really filling..
Topped mine off with some fruit granola for a nice crunch. Have you ever made anything with chia seeds before?

Market Days

We saw Neon Trees! Not normally a fan, but they were incredible live! The crowd was absolutely wild and we were just enjoying the show.


We ended up going both days, despite the fact that I wanted a "sick" day to lay around and get well.


Alas! A weekend of NOTHING amidst the craziness I mentioned in my last post. I have been a little under the weather lately and naturally cannot sit still or relax when there are so many things happening in Chicago!

One of my favorite friends and I went to Market Days which is quite possibly the best people watching you will ever come across.. Ever.

Made a smoothie to recover the next day to reset my system after the fried chicken, funnel cakes, and candy we ate during the festival. Can't wait until next year!

Blogger, down!


Ok, I know for a fact that I have been slacking and I think I owe an explanation.. Things are about to get so very exciting very soon because... drum roll please... I'm going to Scotland!
My very best friend has a break from Vet school in Edinburgh and she wants to meet in London to backpack through the UK and end in Edinburgh for 2 weeks. I've never been out of the US before, so I'm STOKED to have this wonderful opportunity.

Oh, one more thing.. Did I mention I leave in 30 days? Ahhh! I hardly gave myself time to pack a suitcase, let alone get my passport and everything else together. I gotta stop being so freaking impulsive, but travel is one of those things that you can never feel bad about splurging on. Am I right?

Exciting news #2 is that I very recently (as in 2 days ago) got accepted into a biology program and am starting school full time for the fall semester. Everything has been such a whirlwind and I've been running around, trying to get everything together for classes and this trip, all while working full time at my job to save money.

Time to pour myself some fresh coffee after work and bake all my nervous energy out. PLEASE share some travel tips if you have some good ones and I promise I'll be back in the swing of things once all the craziness settles. Have a nice day!
