Delicious pumpkin recipe


As promised, I have a really tasty Fall recipe for you!  This recipe is super easy to make and produces several soft, cake-like pumpkin spice cookies.  Without further ado, here is the recipe!

You will need:

  • 1 cup of butter at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 1 cup canned pumpkin
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Penuche Glaze: 

  • 3 tablespoons butter
  • 1/2 cup firmly packed dark brown sugar
  • 1/4 cup milk
  • 1 1/2-2 cups confectioners sugar

**The reviews for the Penuche Glaze mentioned that it was VERY sugary, so I took the lazy person route and used some store bought cream cheese frosting I had on hand!

Directions:

  1. Preheat oven to 350 degrees
  2. In a large mixing bowl, cream the butter, granulated and brown sugar together until light and fluffy.
  3. Blend in the canned pumpkin, egg and vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg and salt.
  5. Mix the flour mixture into the butter and sugar mixture.
  6. Drop spoonfuls 3 inches apart on a greased cookie sheet and bake for 10-12 minutes or until he edges are golden brown.
  7. Cool the cookies completely on a wire rack.
  8. Frost them with the Penuche glaze or frosting of your choice! I sprinkled a little cinnamon and nutmeg on the tops of mine for added flair.

I would have taken even more photos of the final product but my naughty cat, Carl, just had to intervene and knock the entire plate off the stove while I was out!  Of course they all made direct contact with the floor and were covered in cat hair before I could rescue them..  Thankfully, this recipe makes A LOT, so there is enough dough to save and bake later.
