Will You Be Missed, Chicago?

A few posts ago, I promised some very exciting news.  Well, the time to reveal that news is now... (drum roll please) 

We are moving to California!!!

Jake accepted an amazing job offer and we are moving across the country in a little less than 2 months.  California is so incredibly beautiful, and even though we have amazing friends and family here, we know that our quality of life will be soo much better out there.  I mean, cmon!  Mountains, the ocean, redwood forests and wildlife...  Not to mention the weather is gorgeous year round and it won't physically hurt to be outside in the Winter.  Don't get me wrong, Chicago is cool and all but we are beyond ready for a new chapter in our lives and the Winters here absolutely SLAY me.  
Needless to say, we're ready to leave it all behind and test our luck in a new state.  

So far, we've bought our one way tickets, secured an Airbnb for one month while we look around for our own apartment, and we have put our notice in to our jobs.  It's been such a whirlwind and it didn't truly hit me until a few days ago.  Allow me to tell you why...  So my lovely, lovely, cat needed a dental cleaning and a tooth pulled and when it was all said and done, he ended up completely saturating my car seat, the floor, his carrier, and himself with urine.  And when I say "completely saturating" I mean he exploded with urine like a water balloon with a fire hose attached to one end. We also had Jake's friends staying with us in the apartment and the place was about as messy as the red line on a Sunday and I had a piss soaked cat and car seat to deal with.  Also, I was urine soaked at this time and there was this little Hansel and Gretel trail of peepee from the door, to the bathtub, then back to the door, then back to the bath tub where the semi drugged cat sat in confusion. What the actual f@*#?  I took a 30 minute time out and a partial nap to cool down before I could even assess the car or start cleaning up the apartment.  

I honestly don't know why it took a huge puddle of cat urine to give me the reality bitch slap I needed, but sometimes life is mysterious like that.  Sometimes when I think about how much we still have to do it makes me want to pull all of my hair out and do hard drugs but instead,  I just think about the ocean, the waves and the all around beauty of San Francisco. 

California, please, PLEASE be good to us!  We are going through so much emotional trauma to be with you.  If I have any hair left once we arrive, I want it to blow triumphantly in the warm(ish) breeze.

Mango Salsa and Shrimp Stuffed Baked Sweet Potatoes

Whoa that's a long-ass title, but to be fair I was trying to shorten this initially to "Shrimpy Potatoes" or "Mango Baked Potato" and those both just sounded plain weird and NOT scrumptious.

 Anyway, I am endlessly inspired by people who eat healthy, non-processed foods on a daily basis and forgo Cheezits (my kryptonite) and other unhealthy snacks (Swedish Fish, kryptonite #2) in place of healthier, natural options like, I don't know, real cheese and fruits?  I don't even think there is an acceptable replacement for a lot of my favorite things but in the name of health, we sure will try our best to explore this.  We also watch way too many Netflix documentaries in this apartment that involve food, juicing, obesity and overall health so we are feeling particularly inspired at this moment.  Maybe we will start with 2-3 super healthy meals a week at a time?  Who knows what will happen!

One thing I am certain of however is the fact that these baked sweet potatoes were amazing and I'm dying to try the other recipes from this book ASAP.  We were actually going to make the recipe 'Tangy Turkey Meatballs" with brown rice and edamame for dinner but we are seriously too full from lunch so that will just have to wait until tomorrow.

Without further ado, here is the recipe!  Give it a go and let me know what you think!

"Shrimp-Filled Baked Sweet Potatoes" From the Superfood Kitchen cookbook


  • 4 small sweet potatoes, scrubbed and pricked with a fork
  • 1/2 cup frozen corn kernels
  • 2 plum tomatoes, diced
  • 4 scallions, finely chopped
  • 1 mango, pitted and cut into cubes
  • 1/3 cup finely chopped cilantro
  • 1 red chile, seeded and finely chopped (optional)
  • 10 1/2 cooked and peeled shrimp
  • Finely grated zest and the juice of 1 lime
  • 1 1/4 low fat cottage cheese
  • Salt and Pepper, to taste


  1. Preheat oven to 400 deg F. Bake sweet potatoes on a baking sheet for 1 hour, or until they feel soft when gently squeezed.
  2. Thaw frozen corn kernels in a saucepan with hot water for 3 minutes. Drain and rinse with cool water.
  3. Place tomatoes, scallions and mango in a bowl then stir in cilantro, red chile and corn kernels and season with a little salt and pepper. Cover and store in the refrigerator.
  4. Place shrimp and lime zest and juice in another bowl and season with salt and pepper. Cover and refrigerate.
  5. Put sweet potatoes on a serving plate. Slit in half and open them out. Top with spoonfuls of cottage cheese then fill with salsa and shrimp.

That's it! So so easy.

Spring has Sprung!

Whew! It's been a while once again.  Things still are incredibly busy around here and I have some VERY exciting news I will deliver very soon!  It's definitely been keeping Jake and I very distracted but we are nonetheless thrilled!  NO it's not a baby, don't you worry.  ;) 

Anyways, as you may or may not know, I work at Anthropologie on a very part time basis at this time, and it's fricken impossible to NOT buy anything as an employee.  Basically, I work for clothes and make no money at that job but I am strangely OK with that.  This months paycheck went to this amazing, crisp shirt dress.  It can definitely get a school girl vibe extremely quickly, so I paired it with a fire-engine red lip and some cat eye glasses.  Love loveee this dress and it also looks incredible over jeans or leggings.
