Jalapeño Bacon Mac and Cheese

My experience with Mac and Cheese has always been pretty depressing to say the least. From that blue box with the factory made sauce in a foil bag, to the microwavable noodles with powdered cheese crumbles, I just wasn't ever crazy about macaroni and cheese! In fact, now that I think about it, It was probably because i've never had homemade mac and cheese before and I always made my own nasty creations to "spice up" the dish by adding ketchup, a scrambled egg or by reserving half the powdered cheese to sprinkle on top... Hey, before you judge, that's actually pretty good!

Recently, I was browsing Pinterest for potluck recipes and came across the holy grail of mac and cheese creations... This recipe is from food blogger I'm Bored Let's Go and it's to die for. It has spicy jalepeños, savory bacon, and ooey gooey homemade cheese sauce. What's not to love? I brought a huge dish of this to a friendsgiving dinner and everyone flipped shit over it including my boyfriend, who's also not normally a mac and cheese lover. After eating himself sick on this, he wouldn't stop insisting that I make it again ASAP, so here we are! I made some changes in the cooking method to make cleanup easier. Instead of pan frying the bacon with grease popping everywhere, I decided to bake it on a cookie sheet instead with the jalepeños. It works like a charm! Without further ado, here is the best mac and cheese recipe EVER. 

Simple bacon macaroni and cheese recipe

You Will Need... 

  • 1 pound box of pasta noodles (I like cavatappi noodles) 
  • 2 Tbsp butter
  • 2 cups milk 
  • 8 oz grated sharp cheddar cheese 
  • 4 oz velveeta cheese, chopped up into chunks
  • 1 pound of sliced bacon
  • 3-5 jalepeños, seeded and sliced

Method 

  1. Preheat oven to 400°F 
  2. Cook pasta according to package and drain. Set aside. 
  3. Line cookie sheet with foil and evenly arrange the bacon on top. Scatter jalepeños on top of the bacon to cook, and bake for about 25mins or until bacon is evenly cooked and jalepeños are soft and golden. Cool cooked bacon and jalepeños on some paper towels to absorb excess grease. 
  4. In a medium saucepan, melt butter and add the milk until warm, but not boiling. Add cheeses and cook over medium heat, stirring until cheese is melted and mixture is nice and smooth. 
  5. Add cheese sauce to pasta noodles and stir in chopped bacon pieces and jalepeños. Place in a large casserole dish and bake for 15-20 minutes or until bubbly and golden on top. Serve immediately. You're all done!

Taking photos of the finished product was one of the hardest things i've ever had to do. Guys, I could not stop eating it! I would drop a photogenic piece of bacon or noodle and just instinctively gobble it up. Whoops. What do you guys think about this macaroni and cheese dish?   5. Eating all the unhealthy foods now to not be tempted in the New Year sounds like an amazing plan!
    I only ever had homemade Mac and Cheese, which I love but my ultimate comfort food is Spaghetti Bolognese made by my husband. He makes a big batch (several hours of cooking and red wine involved) and we freeze a lot, so it is available whenever I feel the need for a carb load.

  6. Oooh this looks mouthwateringly delicious! I ate my first ever mac and cheese last summer in a restaurant at Key West and liked it very much! I'll definitely try and cook some at home now that I have this amazing recipe. Might have to change those jalapenos into something mild though, I'm such a coward about all things spicy :D basic pepper could be alright?
    My comfort food is a grilled sandwich with cheddar cheese, spinach and cucumber mayonnaise. And sometimes tuna. Very unhealthy and very tasty! But now I must stop writing or I'll soon find myself getting the grill out... Although I do like the idea of eating whatever before New Years! Maybe I should join you with that.

    1. Hahaha!! That's right! You're just like my BFF and turn into a tomato when you eat spicy things! That's so funny how different people are with spicy things. One time he ate a jalapeno seed by accident and literally sweat was dripping down his face. I think a green or red pepper would be nice in there! I'm thinking about making a "healthy" batch of it soon with broccoli and mushrooms. I'll let you know how that turns out haha. Oh my gosh YUM!! That sounds delicious! My stomach is seriously growling right now. Hahaha we are both making each other so hungry but not to worry! We will be better when the new year comes around ;)

  12. Oh my, this looks amazing! I love mac and cheese, but admittedly I haven't tried cooking it homemade before I just get the Kraft boxes haha. I do love bacon and jalapenos though, so this is perfect! I'll definitely have to give this recipe a try :)

  17. You know, I've actually never had a homemade mac and cheese before... :( Only those toxic canned ones. :P I'm tempted to try this though, it looks super easy and so delicious! Not sure what I'd use instead of bacon though (I'm vegetarian) - veggie bacon is awful. :P x Perhaps just MORE CHEESE? :D x

  19. I'm not going to lie, I've never been a HUGE mac and cheese fan. Maybe it's a British thing but there's something so off-putting about it...that being said, WOW. This could be the closest I've come to wanting to make it and try it because this looks delicious - you just can't go wrong when there's bacon involved!
